veggie update.

I’m 14 days into my thirty-day challenge and I’m totally kicking its ass. And I like it. In the interest of full disclosure, I will say that I had a day of cheating when I went to a water park last Saturday… but it couldn’t be helped. I had a wristband for a free meal. You don’t turn down “free.”

Anyway, I’ve noticed all sorts of lovely benefits from snubbing meat. I’ve lost a good seven or eight lbs in the last two weeks, and my face skin is lovely and plump because I’ve been drinking more water and eating tons of veggies. My stomach is happy because it’s not fighting to digest chunks of meat. All in all, this is probably the best idea I’ve had in a long time; so great, in fact, that I’m considering extending it beyond my thirty days. Hmm.

I’m six days into my thirty-day no-meat challenge, and it rocks. I’ve found that the hardest part is remembering that meat is a current no-no, and finding suitable replacement meals and snacks. We were cooking chicken nuggets as a snack over the weekend, and I almost grabbed one before I remembered that I’d need to find an alternate lunch. For the first two days  I ate a lot of cereal, but now I’m actually appreciative that I chose to do this because I’m really having to think outside the box for meal choices. I have so much more energy when I wake up in the morning and I can feel my metabolism speeding up a bit since it’s not weighed down by animal flesh. Ew. I just grossed myself out.

just ordered a southwest salad with no chicken at mcd’s… the way they looked at me, you’d think I committed utmost blasphemy. non-meat lunches are going to be more difficult if I eat out every day. not that mcd’s is real meat anyway…

30 day challenge.

I see these thirty-day challenges all the time, during which people might post a song,  or a photo or video each day as part of a collective overview of whatever. Today I am starting my own thirty-day challenge: no meat for the month of June.  I’m not yet sure how hard this will be for me – part of me thinks the hard part will be the food replacement and the need to prepare separate yet healthy meatless meals, but I may be underestimating how often I actually eat and enjoy meat. My husband cooks several times a week and it always involves red meat of some kind (fajitas, steaks, burgers, hot dogs, etc) – I’m not sure he’s going to be down with grilling like that and then watching me eat a salad.

Either way, tonight it begins! Pancakes and eggs are on the menu for dinner. Wish me luck.
